There are many things in life I love to do, but cooking is not one of them. It certainly doesn’t help that I live in a city where I can get any kind of food delivered to my door through sites like Seamless and GrubHub, either. Every once in awhile, however, I attempt to get my act together and whip up a home cooked meal. I only have two requirements: it must be easy to make and delicious to eat. These recipes accomplish that mission.
Avocado + Egg Whites
Meet my go-to summer meal. Start by toasting a piece of bread (I’m a whole wheat or multi-grain kind of gal) and then load it up with a heaping of freshly sliced or mashed avocado. Top with some protein (I love egg whites) and sprinkle some hot sauce or hot pepper flakes on top for an added kick. Need more protein? Layer a few thinly sliced chicken breast strips or tofu and enjoy!
Zucchini Noodles with Chicken
“Zoodles” = your summer alternative to pasta. All you need to do is spiralize a zucchini (or vegetable of your choice) and eat it the way you would any traditional pasta dish. Some ideas: toss in olive oil, salt & pepper; bolognese sauce; shrimp and vodka sauce – the possibilities are endless!
Pan Seared Tuna Salad
My husband “invented” this meal a couple of summers ago and it’s still one of our all-time favorites. It involves pan seared tuna (which takes no time at all to make) thrown over some greens with avocado and – wait for it – grapefruit slices! It perfectly compliments the dish and gives it a welcomed seasonal flair.
